  1. 2 lbs 908g / 32oz Frozen yellow corn kernels - thawed

  2. 1 1/2 cups 93g / 3 1/3oz Extra-fine yellow cornmeal

  3. 9 oz 255g Mozzarella - grated

  4. 2 tablespoons 30ml Milk

  5. 1 1/2 cups 297g / 10oz Sugar

  6. 1 Salt

  1. With a meat grinder, coarsely grind the corn kernels and place in a mixing bowl. Add the cornmeal, cheese, milk, sugar, and salt. Mix thoroughly with electric mixer.

  2. Using a 1 1/2- or 3-inch mold, shape the arepas. Stack them on a lightly greased baking sheet with parchment paper between the layers. Refrigerate for 30 minutes.

  3. Cook the arepas over a medium to low heat until golden brown, approximately 3 minutes.

  4. This recipe yields 4 servings.
