  2. 2 pounds green cabbage, quartered, cored and thinly sliced

  3. 1 1/4 cups apple cider vinegar

  4. 1 cup sugar

  5. 1 cup peeled carrots, cut into matchsticks

  6. 4 green onions, thinly sliced

  7. 1/4 cup green bell pepper, cut into matchsticks

  8. 1/4 cup mayonnaise

  1. Toss together the cabbage, vinegar and sugar in a large bowl. Cover and let stand 30 minutes at room temperature. Toss the cabbage again. Re-cover the bowl and let the cabbage stand another 30 minutes. Drain the cabbage well. Add the carrots, green onions, green pepper, mayonnaise, salt and pepper and toss the cabbage to coat. Cover and refrigerate the coleslaw until ready to serve.
