  8. 2 tablespoons vegetable oil

  9. 2 medium onions -- chopped

  10. 5 cloves garlic -- minced

  11. 2 pounds ground beef chuck

  12. 4 tablespoons commercial chili powder

  13. 1 tablespoon sweet paprika

  14. 1 teaspoon ground cumin

  15. 1/2 teaspoon allspice

  16. 1/4 teaspoon cinnamon

  17. 1/4 teaspoon ground cloves

  18. 1/4 teaspoon ground coriander

  19. Salt and fresh ground black pepper

  20. 1 bay leaf

  21. 1 tablespoon red wine vinegar

  22. 1 tablespoon molasses

  23. 1 cup tomato sauce

  24. 1 1/2 cups water

  25. Spaghetti -- cooked and drained;

  26. kidney beans; grated Cheddar; chopped

  27. white

  31. In a large heavy pot heat the oil over moderate heat and cook the onions

  32. and garlic until softened. Add the ground beef, stirring, until the beef is

  33. no longer pink. Drain off any excess fat and discard. Add the chili powder,

  34. paprika, cumin, allspice, cinnamon, cloves, coriander, salt and pepper, to

  35. taste, stirring to combine and cook for 1 minute. Add the bay leaf, red

  36. wine vinegar, molasses, tomato sauce and water and bring to a boil. Reduce

  37. heat and simmer chili, covered for 1 1/2 hours, adding additional water, if

  38. necessary, to achieve a thick and soupy consistency. Discard bay leaf and adjust seasoning with salt and pepper.

  39. Serve the chili over cooked spaghetti with the traditional accompaniments.
