  2. GREEK SPINACH SALAD WITH HOT OIL DRESSING

  6. 3/4 lb Spinach

  7. 1/2 c Red onion -- slivered

  8. 1/2 c Greek olives

  9. 1/2 c Feta cheese -- crumbled

  10. 1 tb Sherry vinegar

  11. 1/4 ts Dried oregano

  12. 1/8 ts Salt

  13. 3 tb Olive oil

  14. Black pepper

  15. Baguette Croutons--

  16. 1 Baguette

  17. 2 tb Butter

  18. 1 tb Olive oil

  19. 1 Clove garlic -- minced

  20. 1. Remove and discard stems from spinach; you should

  21. have about 8 cups leaves. Place spinach in salad bowl

  22. with onion, olives, and cheese. 2. In a small bowl

  23. combine vinegar, oregano, garlic, and salt.

  24. 3. In a small pan swirl olive oil over medium heat

  25. 2 to 3 minutes

  26. a whisk or fork, gradually beat hot oil into vinegar

  27. mixture.

  28. 4. Lightly and quickly mix hot dressing with spinach

  29. mixture. Gently stir in croutons. Serve at once,

  30. offering freshly ground pepper to taste.

  31. Baguette Croutons: Cut baguette crosswise into 24 thin

  32. slices. In a small pan over medium heat melt butter;

  33. add oil and garlic. Place bread slices in a single

  34. layer on a baking sheet. Brush with butter mixture.

  35. Bake in a 250 F oven until crisp and lightly browned

  36. 25 to 30 minutes
