  2. 2 Pounds ground ostrich

  3. 1 onion -- minced

  4. 1/2 bell pepper -- chopped

  5. 2 Cloves garlic -- minced (2 to 3)

  6. fresh parsley -- chopped

  7. 1 Rib celery -- chopped

  8. 2 Slices bread

  9. salt and pepper

  10. 1 Cup tomato sauce -- or catsup, or barbecue sauce

  11. 1 Tablespoon catsup

  12. 1 Tablespoon prepared mustard

  13. 1 Teaspoon brown sugar

  1. In food processor with steel chopping blade in place, chop onion, bellpepper,garlic, parsley, celery, and bread.

  2. Remove to bowl and add seasonings and sauce.

  3. Blend in the meat.

  4. Pack lightly into a loaf pan and then combine the remaining 3 ingredientsandspread over the top.

  5. Bake in preheated 350 degree oven for 40-45 minutes, or until done.

  6. Cool slightly before slicing to serve.
