  1. 2 large onions, chopped

  2. 3 medium carrots, peeled and sliced

  3. 1/2 lb. mushrooms, sliced thin

  4. 4 cups beef broth

  5. 1/4 cup chopped parsley

  6. 1/2 cup barley

  7. 1/4 tsp. black pepper

  1. Place all the ingredients in a large heavy saucepan and bring to a boil over moderately high heat - about 4 minutes. Adjust the heat and simmer partly covered, for 40 minutes or until the barley is tender.
