  1. 2 eaches Cucumbers, peeled, seeded & grated

  2. 1 tablespoon Sugar

  3. 1 teaspoon Vinegar

  4. 1 tablespoon Olive oil

  5. teaspoon Salt

  6. teaspoon Za'atar*

  7. Cured black olives

  1. Drain off exces liquid from the cucumbers & combine with the sugar, vinegar, oil & salt. Crush the za'atar between your fingertips & sprinkle over the cucumbers. Mix well with two forks, then chill.

  2. Decorate with olives before serving.

  3. *An herb found only in the Mediteranean, similar to marjoram which may be sustituted for it. Or use thyme or oregano or a mixture of all three.
