  2. 3 cups bran

  3. 2 1/2 cups all purpose flour or half white and half whole wheat flour

  4. 1/3 cup buttermilk powder

  5. 1 1/2 cups granulated sugar or 1 1/2 cups low calorie sugar replacement

  6. 2 1/2 teaspoons baking soda

  7. --to prepare--

  8. 2 cups bran muffin mix

  9. 1 cup water

  10. 2 tablespoons cooking oil -- safflower preferred

  11. 1 egg -- unbeaten

  1. Combine all ingredients well and store in container with tight-fitting lid. Makes 6 cups mix.

  2. To Prepare: Combine Bran Muffin Mix with water in mixing bowl; let stand 5 minutes. Add oil and egg and mix well. Fill well-greased muffin cups 3/4 full. Bake in preheated 400 oven for 20 to 25 minutes or until tops are very lightly browned and spring back when touched. Makes 9 muffins.

  3. Hints and Helps: This recipe works best in well-greased muffin pans or those sprayed with nonstick cooking spray. Paper muffin cups are NOT recommended as muffins stick badly to the paper unless chilled overnight in the refrigerator after baking.

  4. Variations: Add 2 tsp All-Purpose Baking Spice (see recipe) to prepared Bran Muffin Mix. Add 1/2 cup of any of the following to prepared Bran Muffin Mix: chopped, pared apples; chopped dates; raisins. Makes 12 muffins.
