  2. 1 Granny Smith Apple - diced

  3. 2 Celery stalks - finely chopped

  4. 1 Red bell pepper - chopped

  5. 1/2 Green onions - chopped

  6. 1/2 cup 118ml Walnut pieces

  7. 1 cup 62g / 2 1/5oz Cubed cooked chicken

  8. 3 tablespoons 45ml Chopped flat-leaf parsley

  9. 1/4 cup 59ml Apple cider vinegar

  10. 2 tablespoons 30ml Lemon juice

  11. 3 tablespoons 45ml Olive oil Salt - to taste Freshly-ground black pepper - to taste

  1. Recipe Instructions In a mixing bowl, combine cooked rice with all other ingredients. Toss mixture lightly. Serve at room temperature or chilled. This recipe yields 4 to 6 servings.
