  1. 1/2 pound boneless skinless chicken breast

  2. 1 teaspoon sunflower or canola oil

  3. 1/4 cup water

  4. 1/4 cup lemon juice

  5. 2 teaspoons soy sauce

  6. 1 teaspoon grated fresh ginger root

  7. 1 teaspoon grated lemon rind

  8. 1 teaspoon cornstarch

  9. 1 teaspoon Equal Spoonful

  10. 1/4 red sweet pepper -- cut into strips

  1. Preparation : Slice chicken breasts into thin strips. Heat oil in skillet, brown chicken strips. In a small bowl whisk together, water, lemon juice, soy sauce, ginger root, lemon rind and cornstarch.Add this to chicken in skillet and stir-fry for 5 minutes until the mixture is bubbly. Stir in Equal Spoonful and fold in red pepper strips before serving.
