  2. 4 tbsp. butter

  3. 1 1/2 cups chopped onion

  4. 3/4 cup finely diced carrot

  5. 8 tomatoes, peeled and chopped

  6. 1/4 cup all purpose flour

  7. 2 cups canned tomato juice

  8. 1 cup canned chopped tomatoes with juices

  9. pinch celery salt

  10. 1/2 tsp. salt

  11. 1/2 tsp. pepper

  12. 1 cup whole milk

  13. 1 cup heavy or whipping cream

  1. Cook onion and carrot with butter until tender, about 8 to 10 minutes. Stir in flour and cook 1 minute. Add tomatoes, Tomato juice, chopped tomatoes with juice, celery salt, salt and pepper. Bring to a boil. Simmer 20 minutes. Puree and put through a strainer, pressing heavily on solids. Bring to a simmer and stir in cream and milk. Simmer 10 minutes or until thickened.
