  1. Crust

  2. 1 Lorna Doone cookies - (10 ounces) crush

  3. 1/4 lb 113g / 4oz Butter - melted

  4. 1/4 cup 49g / 1.7oz Sugar

  5. 1 Knox unflavored gelatin

  6. Filling

  7. 16 oz 454g Cream cheese - room temp

  8. 8 oz 227g Sour cream

  9. 2 oz 56g Eggs (large)

  10. 2 tablespoons 30ml Butter

  11. 2 tablespoons 30ml Cornstarch

  12. 1 cup 198g / 7oz Sugar

  13. 1 teaspoon 5ml Vanilla

  14. Crushed cookie crumbs - for Garnish

  1. CRUST-Mix crumbs with butter, sugar and gelatin. Pat out evenly over bottom of greased 9" Springform pan. Bake at 350F exactly 8 minutes.

  2. FILLING-Beat with electric mixer cream cheese, sour cream, eggs, butter, cornstarch, sugar and vanilla. When the filling is perfectly smooth and creamy pour into crust.

  3. Return to 350F oven and bake 30 to 35 minutes or until a knife inserted comes out clean. Cool in pan on rack 20 minutes before releasing Springform from the cake. Cool another 20 minutes before cutting. Sprinkle top with cookie crumbs.
