  1. 2 tablespoons country lard or vegetable shortening

  2. 1 (3-pound) chicken Sauce:

  3. 2 teaspoons brown sugar

  4. 1 cup catsup

  5. 1/2 cup celery, sliced fine

  6. 1/2 tablespoon prepared mustard

  7. 1/8 teaspoon red pepper

  8. 1/4 cup lemon juice

  9. 1 medium onion, chopped

  10. 3 tablespoons Worcestershire sauce

  11. 1 cup water

  12. 1 tablespoon salt

  1. This recipe for South Carolina Barbecued Chicken was submitted by Talcie Howell of Lamar, SC.

  2. Cut chicken in serving size pieces and cook in the hot fat in a skillet until a rich brown color.

  3. Place all the sauce ingredients into skillet. Cover tightly and cook over low heat for 30 minutes.

  4. Remove lid and place pan in a moderate oven, 350 °F (175°C), for 35 to 60 minutes, or until legs are perfectly tender when pierced with fork. As the chicken bakes, baste it frequently with the sauce.
