  1. Collard Greens

  2. Serves 4 2 slices bacon, diced

  3. 8 cups cleaned and trimmed collard greens, torn in large pieces

  4. 1/2 cup water Salt and freshly ground pepper to taste

  5. Cook the bacon in a large pot over medium heat until the fat is

  6. rendered. Remove the bacon with a slotted spoon. Add the greens

  7. and cook, stirring until wilted. Add the water, cover the pot,

  8. turn heat to low and cook until the greens are tender, about 15

  9. minutes. Season with salt and pepper.
