Hummus

  1. 1 lemon

  2. 15 ounce(s) garbanzo beans (chickpeas) , rinsed and drained

  3. 2 tablespoon(s) tahini

  4. 3 tablespoon(s) olive oil

  5. 2 tablespoon(s) water

  6. 1 clove(s)

  7. garlic

  8. 1/8 teaspoon(s) cayenne pepper

  9. Salt

  10. Paprika

  1. From lemon, grate 1 teaspoon peel and squeeze 2 tablespoons juice. In food processor, with knife blade attached, combine lemon peel and juice, beans, tahini, oil, water, garlic, ground red pepper, and 1/4 teaspoon salt. Puree until smooth. Transfer hummus to serving bowl. If not serving right away, cover and refrigerate up to 3 days.

  2. To serve, sprinkle hummus with paprika. Serve with pita wedges.
