    10. 2 to 3 slices bacon-chopped

    13. Peel potatoes and cut coarsley. Make a roux. Brown one

    14. onion in roux. Add chopped bacon, if desired. Add

    15. potatoes and let smother for about 5 minu tes. Add

    16. boiling water, salt and pepper to taste and let cook

    17. until potat oes are done.
