  1. 18 oz. cream cheese

  2. 1 cup sugar

  3. 1 tsp. vanilla

  4. 1 pint heavy cream

  5. 3 packages lady finger pastries

  6. 1 can pie filling, cherry or blueberry

  1. Coat a clean spring form pan with nonstick vegetable cooking spray. In the bowl of an electric mixer, beat together cream cheese, sugar and vanilla. Set aside. In a separate bowl, beat cream until you can see it forming peaks and valleys. (If you chill the metal mixing bowl first, the cream will whip faster and remain firmer longer.) Quickly line the sides and the bottom of the pan with lady fingers. With a spoon or rubber spatula, stir the heavy cream into cream cheese mixture. Now, spoon half of the cream cheese/heavy cream mixture over the first layer of lady fingers. Follow with another layer of lady fingers. Add the rest of the cream cheese mixture. Spoon the pie filling evenly over the top. Refrigerate for 6 hours.
