  1. 1 cup(s) (finely crushed) cheese cracker crumbs

  2. 1/4 teaspoon(s) pepper

  3. 1/2 teaspoon(s) garlic powder

  4. 2 large egg whites

  5. 2 medium zucchini , sliced

  6. 1/4 thick rounds

  1. Preheat oven to 475�F. Mist a baking sheet with cooking spray. In a shallow dish, combine cheese cracker crumbs, pepper and garlic powder. Beat egg whites in a separate shallow dish until foamy. Dip zucchini pieces in egg whites, then toss in crumb mixture, turning to coat both sides. Arrange in a single layer on prepared baking sheet. Mist zucchini with cooking spray. Bake about 8 minutes; flip zucchini and mist with a little more cooking spray. Continue baking until golden and crispy, about 6 more minutes. Serve hot.
