  1. 2 Celery stalks - cut 1/2" slices

  2. 1 Red bell pepper - cut 1" cubes

  3. 6 Green onions with greens - cut 1" pieces

  4. 15 Fresh snow peas - (to 20)

  5. 1/2 Bok-choy head - cut in

  6. 1" pieces (medium)

  7. 2 tablespoons 30ml Peanut oil

  8. 1 tablespoon 15ml Corn starch

  9. 1/2 cup 118ml Chicken stock

  10. 2 tablespoons 30ml White wine -

  11. 1/4 teaspoon 1 1/3ml Salt Freshly-ground black pepper - to taste

  12. 1 lb 454g / 16oz Fresh crab meat - your choice

  1. Recipe Instructions Combine chicken stock, corn starch, white wine and salt in a small bowl and set aside. In a pre-heated wok or frying pan, add the peanut oil and heat it begins to smoke. Add celery, onions and bell pepper and stir-fry until barely tender. Add snow peas and bok choy and stir-fry 2 minutes longer. Add the reserved chicken stock mixture and stir-fry until sauce is thickened and vegetables are coated. Add crab meat and toss gently only to combine. Remove from heat and serve with steamed rice or Chinese noodles. This recipe yields 4 servings.
