  5. 3 oz Semisweet chocolate

  6. 1 oz Unsweetened chocolate

  7. 2 Eggs

  8. 1/4 c Sugar

  9. 1/2 c Whipping cream

  10. 1/4 t Ground cinnamon

  11. Sifted Powdered Sugar

  12. FUDGE MOCHA SAUCE:

  13. 1 c Sugar

  14. 1/2 c Light cream

  15. 3 T Butter

  16. 2 oz Unsweetened chocolate, chop

  17. 2 T Light corn syrup

  18. 1 oz Semisweet chocolate, chopped

  19. 1 T Instant coffee crystals

  20. Butter two 8-ounce souffle dishes. Attach buttered foil collars.

  21. Melt chocolates in heavy small saucepan over low heat, stirring

  22. constantly.

  23. In a large bowl beat eggs until frothy. Add sugar, beating 4-5 minutes,

  24. or until thick and lemon-colored.

  25. Beat one-half of the cream and cinnamon until soft peaks form. Fold

  26. whipped cream into the melted chocolate.

  27. Fold chocolate mixture into beaten eggs. Pour into prepared souffle

  28. dishes. Place in baking dish; pour 1-inch of hot water into dish. Bake

  29. 350 degree oven for 30-35 minutes, or until a knife inserted into center comes out clean. Remove collars. Cool to room temperature. Whip

  30. remaining cream and cinnamon. Sprinkle souffle with sifted powdered

  31. sugar; serve with Fudge Mocha Sauce and whipped cream.

  32. FUDGE MOCHA SAUCE: Combine sugar, cream, butter, chocolates, corn syrup,

  33. and coffee crystals in a saucepan. Cook and stir over medium-low heat

  34. until smooth and slightly thick. Serve warm. Refrigerate leftover sauce.

  35. Makes 1 3/4 cups. --
