  1. bag(s) spinach

  2. cup(s) 1/2 C red onion, sliced & julienned

  3. cup(s) 1/2 C bacon, chopped & cooked until crisp

  4. tablespoon(s) 2 T olive oil

  5. cup(s) 1/2 C brown sugar

  6. tablespoon(s) 1 T dijon mustard

  7. drop(s) 6-8 drops worchestire sauce

  8. ounce(s) 6 oz. red wine vinegar

  9. whole(s) eggs, hard boiled & chopped

  1. Saute the bacon until crisp, set aside on paper towels to drain, reserve drippings. Saute the onion in bacon grease until the onions are translucent. Add brown sugar, mustard, worchestire sauce & vinegar. Continue stirring until reduced to a syrupy consistency.

  2. Place spinach into salad bowl & pour the hot muxture over the spinac. Toss well & top with the chopped eggs & bacon.
