  1. 115 g coriander seeds

  2. 112 g turmeric

  3. 1 tsp ground cinnamon g cayenne pepper

  4. 30 g mustard seeds

  5. 30 g ground ginger

  6. 15 g ground allspice

  7. 50 g fenugreek seeds

  8. 2 1/2 kg ready-roasted chicken , cut into 8 pieces 4 tbsp olive oil

  9. 4 onions , sliced

  10. 1 lemon

  1. Victorian style curried chicken Method 1. Make the curry powder by toasting the spices in a dry pan until fragrant.

  2. Grind, using a pestle and mortar.

  3. Rub this curry powder over the chicken joints.

  4. Heat half of the oil in a frying pan and fry the onions until golden. Remove from the pan and keep warm.

  5. Heat the remaining oil and fry the chicken until crisp. Serve with the fried onions and accompany with lemon wedges.
