  2. 2 tablespoons butter

  3. 1 teaspoon grated gingerroot

  4. 1 medium red jalapeno pepper

  5. seeded and minced 4 ounces trimmed snow peas

  6. 1/2 pound sea scallops

  7. 1 tablespoon fresh lemon juice

  8. 1/2 teaspoon balsamic vinegar

  9. 1 tablespoon minced scallion

  10. salt to taste

  11. fresh ground pepper to taste

  1. Heat butter in large skillet. Add gingerroot and jalapeno pepper and sauté over medium heat 1 to 2 minutes.

  2. Do not allow to burn. Add snow peas and sauté until they glisten, 2 to 3 minutes.

  3. Add scallops and sauté over medium high heat until cooked through, turning over once, 5 to 7 minutes.

  4. Add lemon juice, vinegar and scallion.

  5. Season with salt and pepper.

  6. Cook over high heat until mixture is hot and flavors blend, about 1 minute.
