  1. 1 1/2 cups finely chopped cooked chicken

  2. 1/4 cup finely chopped unpeeled red apple

  3. 1/4 cup chopped peanuts

  4. 1/2 cup mango chutney, chopped

  5. 3 medium English (seedless) cucumbers

  1. In medium bowl, mix all ingredients except cucumbers.

  2. Cut tapered ends from cucumbers. Draw tines of fork lengthwise through cucumber peel to score; cut into 3/4-inch-thick slices.

  3. With small melon baller, scoop and discard center portion of each slice; do not go through bottom. Fill each with 1 tablespoon chicken mixture.
