  1. 4 Catfish fillets

  2. Olive oil

  3. 1/3 lb 151g / 5 1/3oz Cheap fatty bacon

  4. *seasoning mix**

  5. 2 teaspoons 10ml Garlic powder

  6. 2 teaspoons 10ml Thyme

  7. 2 teaspoons 10ml White pepper

  8. 2 teaspoons 10ml Black pepper

  9. 2 teaspoons 10ml Cayenne pepper

  10. 2 teaspoons 10ml Lemon pepper

  11. 2 teaspoons 10ml Cumin

  12. 2 teaspoons 10ml Chili powder

  13. 2 teaspoons 10ml Rosemary - crushed

  14. 2 teaspoons 10ml Fennel seed - crushed

  15. 1 teaspoon 5ml Allspice

  16. 1 teaspoon 5ml Oregano

  17. 1/2 teaspoon 2 1/2ml Salt

  18. Lemon Butter

  19. 1/4 cup 49g / 1.7oz Melted butter

  20. 1 tablespoon 15ml Lemon juice

  21. 1/2 teaspoon 2 1/2ml Tabasco

  22. Sliced green onions

  1. First off, you should cook this in a well-ventilated kitchen. Fry the bacon, then feed it to the dogs and hang onto the grease. Keep it just this side of smoking.

  2. Combine all dry ingredients, rub fillets with olive oil then coat liberally with spices. Drop in hot grease and cook until a you can easily put a fork through them (nothing more evil than overcooked catfish).

  3. (note: This is a very robust recipe. I have varied proportions by as much as 100%, and left out ingredients entirely, with varying, interesting, but never disastrous effect.)
