  1. 8 hard-boiled eggs, peeled

  2. 1 teaspoon white vinegar

  3. 3 tablespoon mayonnaise

  4. 1 tbsp softened cream cheese

  5. 1/2 teaspoon Dijon mustard

  6. pinch of cayenne

  7. salt and fresh ground black pepper to taste

  8. paprika as needed

  1. Cut the eggs in half lengthwise and pop out the yolks into a mixing bowl. Mash them with the vinegar, mayonnaise, cream cheese, mustard, cayenne, salt, and pepper until smooth. If the mixture seems too dry, add a touch more mayo.

  2. Using a spoon, or pastry bag with a star tip, generously fill the holes in the egg white halves with the egg yolk mixture. Sprinkle tops with paprika. Chill well before serving.
