  2. 1 large onion

  3. 2 carrot s

  4. 2 stalks celery

  5. 3 cloves garlic

  6. 1 plum tomato

  7. 6 mushroom s

  8. 1 squash

  9. 1 cup frozen pea s

  10. 3 frankfurters, sliced, optional

  11. 3 tablespoons olive oil

  12. 1/2 teaspoon oregano , optional

  13. salt and pepper, to taste

  14. 3 1/2 quarts cold water

  15. grated Romano cheese

  16. 1/2-1 cup cooked macaroni or rice, optional

  1. Sort split peas, discarding any unwanted material. Rinse in cold water until clear.

  2. Slice all vegetables thin, ⅛“ to ¼”.

  3. Place all ingredients in large saucepot and simmer 45 minutes to 1 hour.

  4. May be combined with frankfurters or cooked small macaroni or rice during last five minutes, if desired.

  5. Top with grated Italian cheese.
