  1. Ingredients :Serves 4-6

  2. 500 g 15 ml 1 bunch 1 bunch For the sate

  3. 60 ml 4-5 cloves

  4. 4-5 5-10 ml 50 g Beef sirloin, sliced against the grain in bite size pieces

  5. Groundnut (peanut) oil

  6. Fresh coriander (cilantro), stalks removed

  7. Fresh mint leaves, stalks removed

  8. Groundnut (peanut) or vegetable oil

  9. Garlic, crushed

  10. Dried Serrano chilies, seeded and ground

  11. Curry powder

  12. Roasted peanuts, finely ground

  1. To make the sate, heat the oil in a heavypan and stir in the garlic until it begins to color.

  2. Add the chilies, curry powder and peanuts.

  3. Stir over a gentle heat until the mixtureforms a paste.

  4. Remove from the heat and leave to cool.

  5. Put the beef into a bowl.

  6. Beat the groundnut oil into the sate andtip the mixture on to the beef.

  7. Mix well, so that the beef is evenlycoated.

  8. Soak four to six wooden skewers in waterfor 30 minutes.

  9. Prepare a barbecue. Thread the meat on tothe skewers in water for 2-3 minutes on each side.

  10. Serve the meat with herb leaves forwrapping.
