  1. Broccoli Mousse

  2. 3-4 lb broccoli, including stems (peeled)

  3. 1 cup Creme Fraiche

  4. 4 Tbsp sour cream

  5. 2/3 cup Parmesan cheese

  6. 1/2 tsp nutmeg

  7. 1/2 tsp pepper

  8. salt to taste (about 1/4-1/2 tsp)

  9. 2 Tbsp butter

  10. Preheat oven to 350.

  11. Boil broccoli in salted water for about 8 minutes until tender.

  12. Place in blender with Creme and whirl till very smooth. Stir in

  13. sour cream, cheese and spices. Dot with butter. Bake 20-25 minutes,

  14. till steaming.

  15. Serves 6.
