  2. 3/4 cup peanut oil

  3. 4 1/2 tbsp. fresh lime juice

  4. 3 tbsp. minced fresh ginger

  5. 3 large cloves garlic, chopped

  6. 2 large jalapenos seeded and chopped

  7. 1 tbsp. oriental oyster sauce

  8. 2 tsp. grated lime peel

  9. 1 tsp. salt

  10. 32 raw large shrimp peeled, deveined

  11. 16 bamboo skewers soaked at least

  12. 2 hours in water or metal skewers

  1. Whisk together oil, lime juice, ginger, garlic, jalapenos, oyster sauce, lime peel and salt. Add shrimp and stir to coat. Cover and refrigerate 1 to 2 hours. Prepare grill. Put 2 shrimp on each skewer. Grill 1 1/2 to 2 minutes per side. Garnish with lime wedges and cilantro sprigs.
