  1. Potlikker

  2. Yield: 4 servings

  3. 1 bunch collard greens

  4. 1 bunch kale

  5. 4-ounce piece Canadian bacon

  6. 3 c water

  7. 1/4 ts crushed red pepper flakes

  8. 1 c vegetable broth

  9. 2 ts granulated sugar

  10. 1 tb cider or red wine vinegar

  11. freshly ground black pepper to taste

  12. salt

  13. Remove the thick ribs from the collard greens and kale; wash in

  14. several chnges of water. Chop coarsely.

  15. Cut the Canadian bacon into chunks and put into a pot with the

  16. water and crushed red pepper flakes. Bring to a boil, reduce the

  17. heat, cover and simmer 30 minutes. Remove the bacon from the pot.

  18. Mince 1/4 cup and set aside.

  19. Stir the vegetable broth, sugar and vinegar into the pot. Add the

  20. greens, cover and let wilt, stirring. Simmer over medium-low heat,

  21. partially covered, about 50 minutes, until tender.

  22. About 10 minutes before the end of the cooking time, stir in the

  23. minced Canadian bacon and pepper to taste. Add the salt only if

  24. necessary and serve.

  25. Note: Potlikker is best served with cornbread to sop up the juices.
