  8. 1 1/2 c Sifted flour

  9. 1/4 ts Baking powder

  10. 1/4 ts Baking soda

  11. 3/8 ts Salt

  12. 1 Egg

  13. 2 Egg whites

  14. 1/2 c Low-fat buttermilk

  15. 1 1/4 ts Vanilla

  16. 1/4 c Stick margarine

  17. 1 tb Unsalted butter

  18. 1 c Sugar

  19. 1. Have all ingredients at room temperature (70F).

  20. Adjust oven racks to divide oven in thirds; preheat

  21. 325F. Spray

  22. 5 cup loaf pan, bundt pan or tube

  23. pan with nonstick cooking spray. 2. In small bowl,

  24. whisk together flour, baking powder, baking soda, and salt; sift together and set aside. 3. In small bowl,

  25. whisk together egg and egg whites; set aside. 4. In

  26. small bowl, combine buttermilk and vanilla; set aside.

  27. 5. Cut margarine and butter into 1/4 chunks and place

  28. in large bowl of electric mixer; beat at medium speed

  29. until softened, about 1 minute. Add sugar gradually,

  30. beating constantly, until smooth, about 3 minutes.

  31. Gradually dribble in beaten eggs, beating at

  32. medium-high speed for 2-3 minutes. On low speed, beat

  33. in 1/3 of the reserved flour mixture, scraping sides

  34. of bowl. On medium-high speed, gradually dribble in

  35. 1/2 of the buttermilk mixture, scraping sides of bowl.

  36. On low speed, beat in half of the remaining flour

  37. mixture. On medium-high speed, beat in the rest of the

  38. buttermilk mixture, scarping sides of bowl. On low

  39. speed, beat in the remaining flour mixture until well

  40. combined (batter may look curdled). Pour into prepared

  41. pan and bake until cake starts to pull away from the

  42. sides of the pan, the top is golden brown and a

  43. toothpick inserted in the center of the cake comes out

  44. 35-40 minutes for bundt or tube pan, or 6. Cool on rack

  45. 10-15 minutes;

  46. invert pan and unmold onto rack to cool completely.
