  2. CHAMPAGNE SORBET WITH WILD STRAWBERRIES

  7. 2 1/2 c Champagne

  8. 1 3/4 c Granulated sugar

  9. 2 c Water

  10. 1/4 c Lemon juice

  11. 1/4 c Orange juice

  12. 3/4 c Wild strawberries

  13. -OR- strawberry slices

  14. Bring three-quarters of the champagne to a boil in a

  15. saucepan. Remove from heat and let cool.

  16. Combine the sugar and water in a pan and stir to

  17. dissolve sugar. Bring mixture to a boil, and let cook

  18. 20 minutes, stirring frequently, until syrup forms a

  19. thread when pulled between your thumb and forefinger.

  20. Remove from heat immediately.

  21. Stir champagne and fruit juices into the sugar syrup;

  22. cool.

  23. Freeze mixture in a plastic container until hard,

  24. several hours or overnight.

  25. In the bowl of an electric mixer, beat sorbet until

  26. smooth. Return sorbet to freezer until firm.

  27. Serve scoops of sorbet on chilled plates or in

  28. glasses, garnished with wild strawberries or strawberry slices.
