  2. Title: UNYEASTED DUTCH RYE BREAD

  5. 4 c Rye meal

  6. Rye, which contains some

  7. Flour

  8. 1 c Cracked wheat

  9. 1 1/2 t Salt

  10. 2 T Honey or molasses

  11. 2 T Oil

  12. 1/4 c Wheat bran

  13. 3 c To

  14. 3 3/4 Boiling water

  15. (wheat germ)

  16. Preparation

  17. Mix all together. Dough will be wet. Cover and let sit overnight.

  18. Add more bran or wheat flour if necessary in order to shape loaf.

  19. Roll

  20. loaf in bran or wheat germ.

  21. 5 hours at

  22. 200F with a pan of hot water in

  23. the

  24. oven on a lower shelf. (Refill with water as necessary).

  25. After completely cooled, wrap in moist towel, and refrigerate for 1

  26. or 2 days before serving, with butter, cream cheese, marmalade,

  27. soups, etc...
