  1. 2 Hot peppers - chopped

  2. 12 Green peppers - chopped

  3. 2 Green tomatoes - chopped

  4. 5 cups 990g / 34oz Sugar

  5. 3 Vinegar

  6. 12 Red peppers - chopped

  7. 1 Cabbage - chopped

  8. 12 Onions - chopped (medium)

  9. 2 tablespoons 30ml Pickling spice

  1. Mix all vegetables with 1/2 cup salt. Let stand overnight: drain. Tie spices in a bag.

  2. Add sugar and spices to vinegar, simmer 20 minutes.

  3. Add all other ingredients and simmer until hot and well seasoned.

  4. Do not overcook. Remove spice bag. Pack hot chow-chow in hot jars and seal at once.
