  1. 1/4 cup margarine

  2. 1 medium green bell pepper -- chopped

  3. 1 medium onion -- chopped

  4. 1 can condensed cream of mushroom soup

  5. 1 can condensed cream of chicken soup

  6. 2 cans ro*tel dicedtomatoes & green chilies

  7. 2 cups cooked chicken -- diced

  8. 12 corn tortillas -- torn into bite-size -- pieces

  9. 2 cups cheddar cheese -- shredded (8 oz)

  1. Preparation : Preheat oven to 325 degrees F. In a large saucepan, cook pepper and onion in margarine until tender, about 5 minutes. Add soups, Ro*Tel and chicken stirring until well blended. In a prepared, buttered, large 4-quart oblong casserole dish alternate layers of tortillas, soup mixture, and cheese repeating for 3 layers. Bake 40 minutes or until hot and bubbling.
