  2. 4-4-ounce Smithfield Lean Generation boneless center-cut pork loin chops

  3. 1/2 cup chopped walnuts

  4. 2 teaspoons canola oil

  5. 2 ounces Roquefort cheese or similar bleu cheese (about 1/2 cup)

  6. 2 green onions, white part and 2 inches of green, minced (reserve green tops for optional garnish)

  7. Several grinds of fresh black pepper

  8. 3 minutes. Transfer nuts to a small bowl. Wipe pan with a paper towel, add oil and brown chops over high heat for about 1 minute per side. Cover pan, reduce heat to low and cook for about 6 minutes, until just cooked through. While chops are cooking, mix remaining ingredients with nuts. Remove chops to a platter. Return heat to high, and reduce pan juices until slightly thick. Top chops with pan juices and cheese mixture. Garnish with reserved onion tops, if desired.
