  1. 1/2 cup butter , softened

  2. 3 ounces cream cheese , softened

  3. 1-1/4 cups all-purpose flour

  4. 1/4 cup strawberry jam or apricot jam / preserves

  5. 1/4 cup sifted confectioners' sugar

  1. Beat butter or margarine and cream cheese in mixer bowl until light and fluffy.

  2. Add flour gradually, beating well after each addition.

  3. Roll dough to 1/8 inch thickness on lightly floured surface.

  4. Cut into 2-inch circles.

  5. Spoon 1/4 teaspoon jam into center of each circle.

  6. Fold opposite edges together, slightly overlapping edges.

  7. Place 2 inches apart on greased or parchment paper lined cookie sheet.

  8. Bake at 375 degrees F (190 degrees C) for 12-15 minutes.

  9. Remove to wire rack to cool.

  10. Sprinkle with confectioners' sugar.

  11. Recipe Makes 2 dozen Note: My Mother-in-law often tried to flip the open ends up a bit. I sometimes roll pieces of dough into a ball and press the bottom of a small juice glass into the centre. Then I fill the indentation with jam or preserves and it doesn't spill out.
