  1. 8 cups 1896ml Sliced squash

  2. 3 Water

  3. 2/3 cup 157ml Salt

  4. 3 cups 594g / 20oz Sugar

  5. 2 cups 474ml Vinegar

  6. 2 tablespoons 30ml Mustard seed

  7. 2 cups 292g / 10oz Chopped bell pepper

  8. 2 cups 292g / 10oz Chopped red pepper

  9. 2 cups 125g / 4.4oz Chopped onion

  1. Soak squash in 3 quarts water and 2/3 cups salt for 1 hour. Drain.

  2. Bring sugar, vinegar and mustard seed to a boil. Add squash and bring to a boil, Add chopped peppers and onions to the hot squash mixture and bring to a boil. Simmer for minutes.

  3. Pack into hot, sterilized jars, cover with hot syrup and seal. Process in a hot water bath for 10 minutes. Remove and cool. Check the seals and store in a dry, dark place.
