  1. 6 tilapia fillets (6 ounces each )

  2. 3 tablespoons butter, melted

  3. 1/2 teaspoon salt, divided

  4. 1/2 teaspoon lemon-pepper seasoning

  5. 1 medium tomato, seeded and chopped

  6. 1 medium orange, peeled, sectioned and chopped

  7. 1/3 cup finely chopped red onion

  8. 1 tablespoon capers, drained

  9. 1-1/2 tablespoons brown sugar

  10. 1 tablespoon red wine vinegar

  1. Place fish in a greased 15-in. x 10-in. x 1-in. baking pan. Drizzle with butter; sprinkle with 1/4 teaspoon salt and the lemon-pepper. Bake at 425° for 10 minutes or until fish flakes easily with a fork. In a small bowl, combine the tomato, orange, onion, capers, brown sugar, vinegar and remaining salt. Serve with fish. Yield: 6 servings.
