  3. 4 slices lemon

  4. 1 small onion sliced

  5. 1 cup celery -- chopped fine

  6. 1 large carrot -- grated

  7. 2 quarts water

  8. 1 small onion minced

  9. 3/4 cup chili sauce

  10. 2 teaspoons salt

  11. 1/4 teaspoon pepper

  12. 1 cup mayonnaise

  1. Bring water to boil in large kettle. Add red snapper, lemon, sliced onion, salt, and pepper. Continue to boil for 20 minutes Drain fish; cool and flake.

  2. Toss fish with minced onion, celery, carrot, chili sauce, and mayonnaise. Adjust salt and pepper to taste. Chill overnight.
