  4. 1 lb. to 1 1/2 lb. ground beef

  8. 2 or 3 tbsp. flour

  10. 1/2 grated cheddar cheese

  11. Topping: 3 cups water

  12. 1 tsp. salt

  13. 1 cup yellow cornmeal

  1. Fry onion, garlic and meat in oil about 5 minutes. Add 2 cups water and boil 10 minutes. Make a paste of chili powder, flour and water to moisten; stir into boiling mixture. Add olives, cheese and bring to a boil.

  2. Boil 3 cups water and salt. Stir cornmeal slowly into boiling water; cook and stir 5 minutes. Place a layer of prepared cornmeal in a 2-quart baking pan, add a layer of meat mixture, another layer of cornmeal, repeating until dish is full, making top layer cornmeal. Bake in 400 degree oven for 30 minutes.
