  2. BLACK BEAN SOUP WITH RUM

  6. 2 c Onion, chopped

  7. 1 c Celery, chopper

  8. 6 Parsley

  9. 2 Fresh thyme

  10. 1 Bay leaf

  11. 3 tb Unsalted butter

  12. 1 lg Ham hock

  13. 2 c Dried black beans, picked ov

  15. 6 c Beef broth

  16. 1/3 c Dark rum

  17. Lemon juice to taste

  18. Garnishes:

  19. Eggs, hard-cooked, chopped

  20. Fresh parsley, chopped

  21. Lemon slices

  22. The night before, soak beans in cold water to cover by 2 inches. Change

  23. water at least once. Drain and rinse. In a heavy kettle, cook onion,

  24. celery, parlsey, thyme, and bay leaf in the butter over mod-low heat,

  25. 10 minutes. Add ham hock, beans, broth,

  26. 4 cups water, salt

  27. and pepper to taste. Bring the mixture to a boil, reduce heat, and simmer,

  28. uncovered, adding more water if necessary to keep beans covered, for 3

  29. hours. Discard ham hock and bay leaf. Put the mixture through a medium

  30. disk of a food mill into a large bowl and then return it to the kettle.

  31. Stir in rum, lemon juice, and salt and pepper to taste. Adjust the

  32. consistency with hot water and garnish for serving with the eggs, parsley,

  33. and lemon slices. Makes about 7 cups. - - - - - - - - - - - - - - - - - -
