  1. Minestrone Soup

  2. 1 large onion, chopped

  3. 3-4 cloves garlic, minced

  4. 2 stalks celery, sliced

  5. 2 carrots, peeled, quartered length-wise and sliced

  6. 1 cup fresh green beans, trimmed to

  7. 1" pieces

  8. 1 red or green pepper, chopped

  9. 1 small zucchini, quartered length-wise and sliced

  10. 1 cup mushrooms, sliced

  11. 2 medium potatoes, peeled and cubed

  12. 14 oz. can peeled and diced tomatoes

  13. 8 oz. can kidney beans

  14. 8 oz. can garbanzo beans

  15. 1 teaspoon dried basil

  16. 1 teaspoon dried oregano

  17. Black pepper, to taste

  18. 5-6 cups vegetable stock/bouillon

  19. 1/2 cup dried pasta (such as elbows or corkscrews)

  20. Salt to taste

  21. Freshly grated parmesan cheese as topping, if desired

  22. Add all soup ingredients to crockpot and stir to mix. Pour stock

  23. 8 hours

  24. 30 minutes before serving, add dried pasta to soup. Stir. When

  25. pasta is 'al dente', add salt to taste and serve. (If desired,

  26. sprinkle freshly grated parmesan cheese over top.)
