  1. Digestive Biscuits

  3. 300g (11 oz) plain wholemeal flour

  4. 4 tbsp wheatgerm

  5. 1/4 tsp bicarbonate of soda

  6. 1/4 tsp salt

  7. 2 tbsp skimmed milk powder

  8. 4 tbsp sugar

  9. 125g (4 1/2 oz) butter

  10. 5 tbsp cold water

  11. 1 tsp vanilla extract Combine the dry ingredients, then cut in the butter so that the

  12. mixture resembles breadcrumbs. Combine the water and vanilla and drizzle over the dry mixture. Blend until the dough can be packed

  13. together.

  14. Roll out on a floured surface or between two sheets of waxed paper

  15. until the dough is about 3 mm (1/8 inch) thick.

  16. Cut into circles or other shapes and bake on a greased baking sheet

  17. 170C /

  18. 325F / Gas

  19. 3 for 20 to 25 minutes. Make sure

  20. the oven does notget too hot. They should not be too brown.

  21. Cool and store in an airtight container.
