  2. 1 pound Italian sausage

  3. 2 cans Rotel diced tomatoes and green chiles

  4. 4 cups beef stock

  5. Potatoes cut to 3/4 dice

  6. Celery, chopped

  7. Onion, chopped

  8. 1 can whole kernel corn, undrained

  9. 1 teaspoon garlic powder

  10. 1/2 teaspoon oregano

  11. 1 1/2 tablespoons freshly chopped cilantro

  12. 2 teaspoons salt

  13. 1 teaspoon black pepper

  1. Brown sausage and onion in a skillet.

  2. Meanwhile, heat the stock, Rotel, celery and potatoes to a simmer.

  3. When sausage is cooked, drain and add to stock along with corn and spices.

  4. Simmer until potatoes are done, about 20 minutes.

  5. Remove from heat.

  6. Stir in cilantro.

  7. Let stand about 15 minutes.
