  1. 1 lb Navy Beans; Dried

  2. 6 Frankfurters, Sliced

  3. 1/4 ts Pepper; White

  4. 1 ts Salt

  5. 2 Onions; Small, Chopped

  6. 4 Bacon; Strips, Cubed

  7. 1 Celery Stalk; Chopped

  8. 1 Carrot; Chopped

  9. 3 c Beef Broth

  10. 8 c Water

  11. 2 tb Parsley; Chopped

  1. * Note: Use the real Frankfurters in this recipe and not the hot dogs! Soak beans overnight.

  2. In a 3-quart saucepan bring beans, water and beef froth to a boil.

  3. Cook for about 1 hour.

  4. Add carrot and celery and continue cooking for 30 minutes.

  5. In a separate frypan cook the bacon until transparent.

  6. Add the onions; cook until golden.

  7. Set aside.

  8. Mash soup through a sieve or food mill.

  9. Return to pan and add the bacon onion mixture, salt and pepper.

  10. Add frankfurters; reheat about 5 minutes.

  11. Sprinkle soup with chopped parsley and serve.
