  1. 1 cup Dried red kidney beans

  2. 2 mediums Yellow onions, chopped

  3. 1 tablespoon Oil

  4. 2 eaches Tomatoes, chopped

  5. 1 teaspoon Salt

  6. 2 teaspoons Turmeric

  7. 3 eaches Chili peppers, ground

  8. 2 cups Coconut milk

  1. In a large pot, cover the beans with water & simmer until they are tender. Saute the onions in the oil until golden. Add, with the remaining ingredients, to the pot & simmer for several minutes until the beans are very tender & the tomatoes are cooked. Serve over rice or a stiff porridge.
