  1. Cornish Hens Basque

  2. 4 Rock Cornish game hens,

  3. 16 oz. each 1/4 cup flour

  4. 2 teaspoons salt

  5. 1/4 teaspoon chili powder

  6. 2 small onions, sliced

  7. 1 green bell pepper, cut into 1/2" strips

  8. 4 oz can sliced mushrooms

  9. 1 clove garlic, chopped

  10. 1 tablespoon olive oil

  11. 1 large bay leaf

  12. 1/2 teaspoon dried thyme leaves

  13. 1 teaspoon dried basil leaves

  14. 1 teaspoon salt

  15. 1/2 teaspoon pepper

  16. 3/4 cup chicken broth or dry white wine

  17. 2 teaspoons salt,

  18. 1/2 teaspoon

  19. pepper, and chili powder. Coat hens with flour mixture. Combine

  20. onions, green bell pepper, mushrooms, garlic, and oil in Crock-Pot.

  21. Arrange hens on top of vegetables. Sprinkle with remaining

  22. seasonings. Pour chicken broth (or wine) over hens. Cover and cook

  23. 8 to 10 hours.
