  1. 1 lemon

  2. 3 naval orange s

  3. 1 Tb dijon mustard

  4. 1 TB EVOO

  5. TB sugar

  6. salt & pepper

  7. 1 seedless cucumber , cut in half & thinly sliced

  8. 4 c. red cabbage , very thinly sliced

  9. 1/4 c. panko bread crumbs

  10. 2 green onion s, finely chopped

  11. 1 Tb freshly chopped tarragon leaves

  12. 4 4oz salmon fillets

  13. 4 tsp fat-free plain greek yogurt

  1. Preheat oven to 450. Line jelly-roll pan w/ foil. grate 1 tsp lemon peel & 3 TB juice. Grate 1½ tsp orange peel; set aside. Section oranges; cut into ½" slices. Arrange orange slices slightly over lapping in center of prepared pan.

  2. In large boel stir together dijon, oil, lemon juice & ¼ tsp salt. Add cucmbver & cabbage; toss to coat, set aside.

  3. In small bowl stir together lemon peel, orange peel, panko, green onions, tarragon & ¼ each of salt & pepper. Arrange salmon on orange slices. Spread 1 tsp yogurt on each fillet, top w/ panko mixture. Pressing gently to adhere.

  4. Bake salmon 10-13 min or until opaque throughout. transfer fillet to plates, serve w/ cabbage mixture.
